My Mom

When I was trying to figure out what I should write about for my second blog post I came to the realization that although I thank my mom and show her appreciation for all that she does for me, I have never put it into words the hard work and dedication she shows to me and my lifestyle. My mom may not agree with all my choices, diets, or lifestyle, but apart from all of that she supports me in whatever I want to venture into. When I was first going vegetarian she didn't understand why I wanted to make that change, but without hesitation she started researching, and kept making me meals even when it would mean her making something entirely separate for me than what the rest of my family would be eating for dinner that night. It was a learning process for the both of us but in all honesty, without her research and cooking for me at the beginning I don't think I could've kept up with being a vegetarian or to have the confidence to enter into veganism. When I contemplating going vegan and I told my mom, she warned me that it might be too much for her to have something for me to eat for dinner that went along with the other food she would be cooking. I understood this and was ready to be responsible for my own food when I came home from college. After she became more educated on what being a vegan meant, cooking wise, she started maybe cooking something without butter or putting cheese on the side so that I could eat it too. I don't know many other mom's that would put so much time and effort into a meal for their kid, but the fact that she does shows me the kind of mom I want to be eventually when I have my own kids. Love you mom :)
